Ingredients

  • 1 lb 450 g boneless chicken thighs or breasts
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1/4 cup hot honey or honey + chili flakes
  • 2 cups cooked rice white, brown, or jasmine
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced
  • 1/2 cup shredded carrots
  • Optional: sesame seeds and chopped green onions for garnish

Instructions

Prepare the Chicken

  • Pat the chicken dry. Season with salt, pepper and garlic powder on both sides.

Cook the Chicken

  • Heat olive oil in a skillet over medium heat. Sear chicken 4–5 minutes per side until golden.

Steam the Vegetables

  • While chicken cooks, steam broccoli, bell peppers, and carrots until tender-crisp.

Slice the Chicken

  • Remove chicken from skillet and let rest 3 minutes. Slice into bite-sized pieces.

Add Hot Honey

  • Pour hot honey into the skillet. Heat for 1–2 minutes, stirring to warm the sauce.

Toss Chicken in Sauce

  • Add sliced chicken to the skillet. Toss gently to coat evenly in the hot honey.

Assemble the Bowl

  • Place cooked rice in serving bowls. Arrange chicken and vegetables on top.

Drizzle Extra Sauce

  • Drizzle any leftover hot honey sauce over the bowl for extra flavor.

Garnish the Bowl

  • Sprinkle sesame seeds and chopped green onions for color and texture.

Serve and Enjoy

  • Serve warm. Each bite is sweet, spicy and packed with flavor.

Notes

  • Adjust the Heat: Add more chili flakes for spicier honey or less for milder flavor.
  • Change the Vegetables: Use zucchini, snap peas, or cauliflower for variety.
  • Make it Low-Carb: Serve over cauliflower rice instead of regular rice.
  • Make it Crispy: Coat chicken in cornstarch before searing for extra crunch.
  • Meal Prep: Store in airtight containers for 3–4 days. Reheat before eating.
