Ingredients
  

  • 4 cups broccoli florets
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 4 cups vegetable or chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese optional
  • 1/4 cup heavy cream or milk optional, for extra creaminess

Instructions
  

Heat Olive Oil

  • Place a pot on medium heat. Add olive oil and let it warm for 1–2 minutes.

Sauté Onion and Garlic

  • Add chopped onion and minced garlic. Cook until soft and fragrant, about 3–4 minutes.

Add Broccoli

  • Stir in broccoli florets. Cook for 2–3 minutes until they become slightly tender.

Pour in Broth

  • Add vegetable or chicken broth. Bring to a gentle boil for 5–6 minutes until broccoli is soft.

Add Herbs and Seasoning

  • Stir in oregano, basil, salt and black pepper. Let the flavors combine for 2 minutes.

Blend the Soup
