Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 4 –5 slices bacon
  • 2 medium potatoes peeled and thinly sliced
  • 1 small onion finely chopped
  • 1/2 cup grated cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh chives chopped (optional)
  • 1 tablespoon fresh parsley chopped (optional)

Instructions

Cook the Bacon

  • Place bacon slices in a cold skillet. Cook over medium heat until crispy. Remove and drain on paper towels.

Prepare the Potatoes

  • Thinly slice potatoes. In the same skillet with bacon fat, sauté potatoes over medium heat until golden and tender.

Sauté the Onion

  • Add chopped onion to the skillet. Cook for 2–3 minutes until soft and translucent. Stir with potatoes occasionally.

Whisk Eggs and Milk

  • In a mixing bowl, whisk together eggs and milk. Add salt and pepper. Beat until smooth and light.

Combine Ingredients

  • Crumble the cooked bacon and add to the potatoes and onions. Stir to distribute evenly in the skillet.

Add Eggs to Skillet

  • Pour egg mixture over potatoes, onions, and bacon. Spread evenly with a spatula.

Add Cheese

  • Sprinkle grated cheddar cheese on top of the egg mixture. This makes the frittata golden and flavorful.

Cook on Stove

  • Cook on medium-low heat for 5 minutes without stirring. Edges should start to set while the center remains soft.

Bake in Oven

  • Transfer skillet to preheated oven at 375°F (190°C). Bake for 12–15 minutes until eggs are fully set and golden.

Add Fresh Herbs

  • Remove frittata from oven. Sprinkle with fresh chives and parsley for extra color and flavor.

Serve and Enjoy

  • Cut into wedges. Serve warm for breakfast or brunch. Pairs well with fresh fruit or a light salad.

Notes

  • Use a Nonstick or Cast Iron Skillet: Both work well for even cooking and easy flipping.
  • Thicker Potatoes: Boil for a few minutes before slicing for soft results.
  • Cheese Variations: Try Gruyère, mozzarella or feta instead of cheddar for a new flavor.
  • Vegetarian Option: Omit bacon and add mushrooms or bell peppers for a vegetarian frittata.
  • Make Ahead: Frittata can be made a day ahead and reheated gently in the oven.
  • Season Generously: Potatoes and eggs absorb salt well so season carefully.
