Ingredients
  

  • 4 cups corn kernels fresh or frozen
  • 1 cup water
  • 3 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon butter
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt to taste
  • 1 tablespoon lime juice
  • ¼ cup crumbled cotija cheese or feta cheese
  • Fresh cilantro for garnish

Instructions
  

Add Corn and Water

  • Place corn kernels into the Instant Pot. Pour in one cup of water. Close the lid and seal the valve properly.

Pressure Cook the Corn

  • Set the Instant Pot to manual pressure on high. Cook for five minutes. This keeps corn tender and juicy.

Quick Release Pressure

  • After cooking, carefully do a quick pressure release. Open the lid once all steam escapes completely.

Drain Excess Water

  • Drain the extra water from the pot. Leave the corn inside the Instant Pot for mixing flavors easily.

Add Butter

  • Add butter to the hot corn. Stir gently until butter melts fully and coats the corn evenly.

Mix Creamy Ingredients

  • Add mayonnaise and sour cream to the corn. Stir slowly until the mixture becomes smooth and creamy.

Add Spices

  • Sprinkle chili powder, paprika, garlic powder, and salt. Mix well so spices spread evenly.

Add Lime Juice

  • Pour in fresh lime juice. Stir again. Lime adds freshness and balances creamy flavors nicely.

Add Cheese

  • Add crumbled cotija cheese. Mix lightly. Save some cheese for topping before serving.

Garnish and Serve

  • Top with extra cheese and chopped cilantro. Serve warm as a side or snack.

  • Frozen corn works well too. No need to thaw before cooking.
