Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar

For the Apple Layer:

  • 2 cups peeled and diced apples
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon

For the Cheesecake Layer:

  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

For the Topping:

  • ½ cup caramel sauce store-bought or homemade
  • ¼ cup chopped pecans optional

Instructions
  

Prepare the Oven

  • Preheat oven to 350°F. Line a 9x9 inch pan with parchment paper for easy removal.

Make the Crust

  • Mix graham cracker crumbs, melted butter and sugar until combined. Press into the bottom of the pan evenly.

Bake the Crust

  • Bake crust for 8–10 minutes. Remove from oven and let it cool slightly.

Prepare the Apple Layer

  • In a bowl, toss diced apples with brown sugar and cinnamon until coated evenly.

Spread Apple Layer

  • Evenly layer the apple mixture over the baked crust.

Make Cheesecake Filling

  • In a bowl, beat cream cheese, sugar and vanilla until smooth. Add egg and mix until creamy.

Add Cheesecake Layer

  • Pour cheesecake mixture over the apple layer. Spread gently to cover evenly.

Bake the Bars

  • Bake for 25–30 minutes until edges are set and center is slightly soft.

Cool and Chill

  • Let bars cool to room temperature. Refrigerate for 2 hours to set completely.
