Ingredients
  

  • 4 bone-in chicken thighs
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup dried apricots halved
  • 1/4 cup raisins optional
  • 1/3 cup almonds or pistachios toasted
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Fresh parsley or cilantro for garnish

Instructions
  

Season the Chicken

  • Pat chicken dry with paper towel. Season both sides with salt, black pepper, turmeric and paprika evenly.

Brown the Chicken

  • Heat olive oil in a deep skillet over medium heat. Add chicken skin side down. Cook until golden brown.

Flip and Cook

  • Turn chicken over and cook other side for five minutes. Remove chicken and set aside.

Cook the Onion

  • In the same pan, add sliced onion. Cook slowly until soft and lightly golden in color.

Add Garlic and Spices

  • Add minced garlic, cinnamon and cumin. Stir for one minute until fragrant but not burned.

Return the Chicken

  • Place browned chicken back into the pan. Nestle pieces gently into the onion mixture.

Add Liquid Ingredients

  • Pour chicken broth, honey and lemon juice into the pan. Stir gently to combine flavors.

Add Apricots and Raisins

  • Scatter dried apricots and raisins around the chicken. They will soften and flavor the sauce beautifully.

Simmer Slowly

  • Cover the pan and reduce heat to low. Simmer gently for 30 minutes until chicken is tender.

Toast the Nuts

  • While chicken cooks, toast almonds or pistachios in a dry pan until lightly golden and fragrant.

Finish and Garnish

  • Remove lid and spoon sauce over chicken. Sprinkle toasted nuts and fresh herbs before serving.

  • Use boneless chicken if preferred, but reduce cooking time slightly.
