Ingredients
  

  • 1 1/2 lb pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon Dijon mustard optional

Instructions
  

Preheat Oven

  • Preheat oven to 400°F (200°C). Prepare a baking sheet or use an oven-safe skillet.

Prepare Pork

  • Pat pork tenderloin dry with paper towels. Trim off silver skin if needed.

Mix Seasoning

  • In a small bowl, combine salt, pepper, garlic powder, paprika, onion powder and Italian seasoning.

Season Pork

  • Rub olive oil over pork. Coat evenly with seasoning mixture. Add Dijon mustard if using.

Sear Pork

  • Heat skillet over medium-high heat. Sear pork on all sides for 2–3 minutes until golden.

Bake Pork

  • Transfer skillet to oven or move pork to baking sheet. Bake for 18–22 minutes.

Check Temperature

  • Insert meat thermometer into thickest part. Internal temperature should reach 145°F (63°C).

Rest Meat

  • Remove from oven. Let pork rest for 5–10 minutes before slicing.

Slice and Serve

  • Slice into thick medallions. Serve warm with your favorite sides.
