Ingredients
  

  • 3 ripe bananas mashed
  • ½ cup butter melted
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sour cream or yogurt
  • ½ teaspoon cinnamon optional
  • ½ cup chopped nuts or chocolate chips optional

Instructions
  

Preheat the oven

  • Set oven to 175°C. Grease a loaf pan or line with parchment paper for easy removal.

Mash the bananas

  • Use a fork to mash bananas in a bowl until smooth with a few small lumps remaining.

Mix wet ingredients

  • Add melted butter, sugar, eggs and vanilla to bananas. Mix well until smooth and combined.

Prepare dry ingredients

  • In another bowl, mix flour, baking soda, salt and cinnamon evenly.

Combine mixtures

  • Add dry ingredients into wet mixture. Stir gently until just combined. Do not overmix the batter.

Add sour cream

  • Stir in sour cream or yogurt. This makes the bread extra soft and moist.

Add extras

  • Fold in nuts or chocolate chips if using. Mix lightly.

Pour into pan

  • Pour batter into prepared loaf pan. Spread evenly with a spatula.

Bake the bread

  • Bake for 50 to 55 minutes until a toothpick inserted comes out clean.

Cool and serve

  • Let bread cool in pan for 10 minutes, then remove and cool completely before slicing.
