Ingredients
  

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups red enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions
  

Cook the beef

  • Heat oil in a skillet. Add ground beef and cook until browned, breaking it into small pieces.

Add onion and garlic

  • Add chopped onion and garlic. Cook until soft and fragrant for better flavor.

Season the meat

  • Add salt, pepper, chili powder and cumin. Mix well so spices coat the beef evenly.

Add sauce

  • Pour half of the enchilada sauce into the beef mixture. Stir and simmer for a few minutes.

Warm tortillas

  • Heat tortillas slightly so they become soft and easy to roll without breaking.

Fill tortillas

  • Add beef mixture and some cheese into each tortilla. Roll them tightly.

Arrange in baking dish

  • Place rolled enchiladas in a baking dish seam-side down. Pack them closely together.

Add sauce and cheese

  • Pour remaining sauce over enchiladas. Sprinkle cheddar and Monterey Jack cheese on top.

Bake and serve

  • Bake at 180°C for 25–30 minutes until cheese is melted and bubbly. Garnish with cilantro.
