Ingredients
  

  • 2 chicken breasts cooked and shredded
  • 3 poblano peppers
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 cup corn
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese

Instructions
  

Roast the peppers

  • Place poblano peppers under the broiler until skins blacken. Peel and chop them.

Cook onions

  • Heat olive oil in a soup pot. Cook onions until soft.

Add garlic

  • Stir in garlic and cook for one minute.

Add peppers and tomatoes

  • Add chopped poblano peppers and diced tomatoes to the pot.

Pour broth

  • Add chicken broth and stir well.

Add chicken and corn

  • Mix in shredded chicken and corn.

Add cream

  • Pour in heavy cream and seasonings. Simmer for 15 minutes.

Add cheese and serve

  • Stir in shredded cheese until melted. Serve warm.

  • Use rotisserie chicken to save time
