Ingredients

  • 6 large eggs
  • 1 cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices bread cubed
  • 6 slices Canadian bacon
  • 1 cup shredded cheddar or Swiss cheese
  • 2 tablespoons butter melted
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh parsley chopped (optional for garnish)

Instructions

Preheat Oven

  • Preheat oven to 180°C (350°F). Grease a 9x13-inch baking dish lightly with butter.

Prepare Bread

  • Cube the bread slices into 1-inch pieces. Spread evenly in the bottom of the baking dish.

Layer Canadian Bacon

  • Place Canadian bacon slices over the bread cubes. Cut into smaller pieces if needed for even coverage.

Mix Eggs and Milk

  • In a bowl, whisk together eggs, milk, salt and black pepper until smooth and combined.

Add Cheese

  • Stir half of the shredded cheese into the egg mixture for a creamy texture and flavor.

Pour Mixture

  • Pour the egg and cheese mixture evenly over bread and bacon layers. Press gently to soak bread in the mixture.

Top with Remaining Cheese

  • Sprinkle remaining cheese evenly over the casserole. Drizzle melted butter on top for richness.

Bake Casserole

  • Bake in preheated oven for 30–35 minutes, until eggs are set and the top is golden brown.

Optional Hollandaise

  • If desired, whisk Dijon mustard, lemon juice and a little melted butter for a quick Hollandaise-style topping. Pour over casserole before serving.

Garnish and Serve

  • Garnish with fresh parsley. Slice into portions and serve warm for a hearty breakfast or brunch.

Notes

  • Use day-old bread to soak up egg mixture better
  • Substitute Canadian bacon with cooked ham or smoked turkey
  • Add sautéed spinach or mushrooms for extra flavor
  • Swap cheddar for Gruyère or Swiss cheese
  • Prepare the casserole a day ahead and refrigerate, then bake in the morning
  • Add a pinch of paprika on top for a colorful presentation
