Ingredients
  

For the dough:

  • 3 cups all-purpose flour
  • 2 teaspoons yeast
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt

For the filling (spinach version):

  • 2 cups fresh spinach chopped
  • 1 small onion finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sumac optional

Instructions
  

Activate yeast

  • Mix warm water, sugar and yeast. Let it sit for 5 minutes until foamy.

Make the dough

  • Add flour, salt and olive oil. Mix to form a soft dough.

Knead dough

  • Knead for 8 to 10 minutes until smooth and elastic.

Let it rise

  • Cover and let dough rise for 1 hour until doubled in size.

Prepare filling

  • Mix spinach, onion, olive oil, lemon juice, salt and spices. Squeeze excess liquid.

Shape dough

  • Divide dough into small balls and roll into circles.

Add filling

  • Place filling in center of each circle.

Fold fatayer

  • Fold edges to form triangle shapes and seal well.

Bake

  • Place on tray and bake at 180°C for 18 to 20 minutes until golden.

Serve warm

  • Serve fresh and enjoy soft and flavorful fatayer.

Notes

  • Do not skip squeezing spinach
  • Use cheese or meat filling instead
  • Add feta for richer taste
  • Use whole wheat flour for healthier option
  • Brush with olive oil before baking
  • Add herbs for extra flavor
  • Do not overfill
