Ingredients
  

  • 1 kg chicken pieces legs, thighs, or breast
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder optional
  • Oil for frying

Instructions
  

Marinate the chicken

  • Place chicken in a bowl. Pour buttermilk over it. Cover and refrigerate for at least 4 hours or overnight for best results.

Prepare coating mixture

  • In another bowl, mix flour, salt, pepper, paprika, garlic powder, onion powder and chili powder. Stir well to combine evenly.

Heat the oil

  • Pour oil into a deep pan. Heat on medium heat. Oil should reach about 175°C for perfect frying results.

Coat the chicken

  • Remove chicken from buttermilk. Dip each piece into flour mixture. Press well to coat completely for a crispy texture.

Rest the coated chicken

  • Place coated chicken on a rack. Let it rest for 10 minutes. This helps the coating stick better during frying.

Fry the chicken

  • Carefully place chicken in hot oil. Fry in batches. Do not overcrowd the pan to keep temperature steady.

Cook until golden

  • Fry each piece for 12 to 15 minutes. Turn occasionally. Chicken should be golden brown and cooked inside completely.

Drain excess oil

  • Remove chicken and place on paper towels or wire rack. This removes extra oil and keeps chicken crispy.

Serve hot
