Ingredients

  • 2 tablespoons vegetable oil
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1 cup tomato sauce
  • 3 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 cup frozen peas and carrots optional
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
  

Heat the Oil

  • Add oil to a large skillet over medium heat.

Toast the Rice

  • Add rice and stir until lightly golden.

Cook Onion

  • Add chopped onions and cook until soft.

Add Garlic

  • Stir in garlic and cook for one minute.

Add Tomato Sauce

  • Pour tomato sauce into the pan and stir well.

Add Broth

  • Pour in chicken broth and mix gently.

Season

  • Add salt, pepper and cumin.

Add Vegetables

  • Stir in peas and carrots if using.

Simmer

  • Cover and cook on low heat for 18–20 minutes.

Rest the Rice

  • Turn off heat and let rice sit covered for 5 minutes.

Fluff and Serve

  • Fluff rice with a fork and garnish with cilantro.
