Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 zucchini diced
  • 1 yellow squash diced
  • 1 can 15 oz diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 can 15 oz cannellini or kidney beans, drained
  • 1 cup small pasta like ditalini
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or Parmesan for garnish

Instructions
  

Heat Oil

  • In a large pot, heat olive oil over medium heat.

Cook Aromatics

  • Add onion, carrots and celery. Sauté for 5 minutes until softened.

Add Garlic

  • Add minced garlic and cook for 1 minute until fragrant.

Add Vegetables

  • Add zucchini, yellow squash and diced tomatoes. Stir well.

Add Broth & Beans

  • Pour in broth and add drained beans. Stir to combine.

Season Soup

  • Add oregano, basil, salt and black pepper. Mix well.

Simmer Soup

  • Bring to a boil, then reduce heat and simmer for 20 minutes.

Add Pasta

  • Stir in pasta and cook until tender, about 8–10 minutes.

Serve

  • Ladle soup into bowls and garnish with parsley or Parmesan.
