Ingredients
  

  • 1 pre-made pie crust
  • 1 tablespoon olive oil or butter
  • 1 cup mushrooms sliced
  • 1 cup fresh spinach
  • 1/2 cup onion chopped
  • 4 large eggs
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional

Instructions
  

Preheat Oven

  • Preheat oven to 375°F (190°C). Place pie crust in a pie dish.

Cook Vegetables

  • Heat oil in a skillet. Sauté onion and mushrooms for 5–6 minutes until soft.

Add Spinach

  • Add spinach and cook until wilted. Remove from heat and let cool slightly.

Prepare Egg Mixture

  • In a bowl, whisk eggs, cream, salt, pepper and nutmeg.

Assemble Quiche

  • Spread cooked vegetables evenly in the pie crust. Sprinkle Swiss cheese on top.

Pour Egg Mixture

  • Pour the egg mixture over the filling carefully.

  • Bake for 40–45 minutes until the center is set and top is lightly golden.

Cool Slightly
