Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups rolled oats
  • 1/2 cup raisins or chocolate chips optional

Instructions
  

Preheat the oven

  • Set your oven to 175°C (350°F). Line a baking sheet with parchment paper to prevent cookies from sticking.

Cream butter and sugars

  • In a bowl, beat butter, brown sugar and white sugar until light and fluffy. This step makes cookies soft.

Add eggs and vanilla

  • Add eggs one at a time. Mix well after each. Add vanilla extract and mix until smooth.

Mix dry ingredients

  • In another bowl, combine flour, baking soda, salt and cinnamon. Stir well to distribute evenly.

Combine wet and dry

  • Add dry mixture into wet mixture slowly. Mix until just combined. Do not overmix to keep cookies soft.

Add oats and extras

  • Stir in rolled oats and raisins or chocolate chips. Mix gently until evenly distributed.

Shape the cookies

  • Scoop dough onto baking sheet. Leave space between each cookie as they will spread during baking.

Bake the cookies
