Ingredients
  

  • 1 loaf thick bread brioche or French bread, sliced
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter for topping
  • Maple syrup for serving

Instructions
  

Prepare the baking dish

  • Grease a baking dish with butter. Arrange sliced bread evenly inside the dish in layers.

Make the custard

  • In a bowl, whisk eggs, milk, cream, sugars, vanilla, cinnamon and salt until smooth and well combined.

Pour over bread

  • Slowly pour the custard mixture over the bread. Make sure all pieces are fully soaked.

Press the bread

  • Gently press the bread down using a spoon. This helps it absorb more liquid evenly.

Cover and refrigerate

  • Cover the dish with foil and place it in the refrigerator overnight or at least 6 hours.

Preheat oven

  • In the morning, set oven to 180°C (350°F). Remove dish from fridge and let it sit for 10 minutes.

Add butter topping

  • Cut butter into small pieces and place on top of the soaked bread for a rich golden crust.

Bake the dish

  • Bake uncovered for 40 to 45 minutes until the top is golden and the center is set.

Check doneness

  • Insert a knife in the center. It should come out clean and not watery.

Serve warm

  • Let it cool slightly, then serve warm with maple syrup or powdered sugar.
