Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup raw peanuts
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions
  

Prepare Baking Sheet

  • Line a baking sheet with parchment paper. Set aside to pour hot brittle later.

Cook Sugar Mixture

  • In a saucepan, combine sugar, corn syrup and water. Heat over medium until sugar dissolves.

Add Peanuts

  • Stir in peanuts and continue cooking. Stir frequently to prevent burning.

Boil to Caramel Stage

  • Cook mixture until golden brown and reaches 300°F (hard crack stage) on candy thermometer.

Remove from Heat

  • Take saucepan off heat. Immediately stir in butter, vanilla, baking soda, and salt.

Pour onto Baking Sheet

  • Quickly pour mixture onto prepared baking sheet. Spread evenly using spatula.

Cool and Hardening

  • Let peanut brittle cool completely at room temperature until firm.

Break into Pieces

  • Once cool, break brittle into bite-sized pieces using a knife or hands.

Store

  • Store in an airtight container to keep it crisp.
