Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans or walnuts

Instructions
  

Preheat Oven

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Cream Butter and Sugars

  • Beat butter, granulated sugar and brown sugar until light and fluffy.

Add Eggs and Vanilla

  • Mix in eggs one at a time. Add vanilla extract and blend well.

Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda and salt.

Mix Wet and Dry

  • Gradually add dry ingredients to butter mixture. Mix until just combined.

Add Oats, Coconut, Nuts, and Chocolate Chips

  • Fold in oats, coconut, nuts, and chocolate chips evenly.

Scoop Cookies

  • Drop cookie dough by tablespoons onto prepared baking sheet, leaving space between each cookie.

Bake

  • Bake for 12–15 minutes until edges are lightly golden.

Cool

  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Serve

  • Enjoy warm or store in an airtight container for later.
