Ingredients

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 4 cups chicken or vegetable broth
  • 1 cup fresh spinach leaves
  • 1 package about 9 oz cheese tortellini
  • 1/2 cup heavy cream
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

Heat Olive Oil

  • In a large pot, heat olive oil over medium heat. This starts the base for your flavorful soup.

Sauté Onions and Garlic

  • Add diced onion and garlic. Cook for 2-3 minutes until fragrant and slightly translucent.

Add Carrots

  • Add diced carrots and sauté for another 3 minutes. This enhances their natural sweetness and flavor.

Pour in Broth

  • Add chicken or vegetable broth. Bring soup to a gentle boil to start cooking the vegetables.

Add Herbs and Seasoning

  • Stir in dried basil, oregano, salt and black pepper. Adjust seasoning to taste for a balanced flavor.

Cook Tortellini

  • Add tortellini to boiling broth. Cook according to package instructions, usually 5-7 minutes, until tender.

Add Spinach

  • Add fresh spinach leaves to the soup. Stir gently until wilted, adding color and freshness.

Stir in Cream

  • Pour in heavy cream and stir well. This gives a rich and creamy texture to the soup.

Simmer for Flavor

  • Reduce heat and simmer for 2-3 minutes. This allows all flavors to blend together beautifully.

Serve with Garnish

  • Ladle soup into bowls and top with grated Parmesan cheese. Serve warm and enjoy.

Notes

  • Use store-bought or homemade tortellini.
  • Add cooked chicken or sausage for extra protein.
  • Substitute heavy cream with half-and-half for lighter soup.
  • Add frozen peas or corn for more vegetables.
  • Top with fresh basil or parsley for extra freshness.
  • Serve with crusty bread or garlic toast.
  • Make a larger batch and freeze portions for later.
