Ingredients
  

  • 1 whole chicken about 3–4 pounds
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon onion powder
  • Fresh parsley for garnish
  • Lemon slices for serving

Instructions
  

Prepare the Chicken

  • Place the whole chicken on a cutting board. Use kitchen scissors to cut along both sides of the backbone and remove it carefully.

Flatten the Chicken

  • Turn the chicken over so the breast faces up. Press firmly on the breastbone until the chicken flattens completely.

Pat the Chicken Dry

  • Use paper towels to dry the chicken completely. Dry skin helps the chicken roast better and become crispy.

Make the Seasoning Mix

  • In a bowl, mix olive oil, garlic, lemon juice, lemon zest, salt, pepper, paprika, thyme, rosemary and onion powder.

Season the Chicken

  • Brush the seasoning mixture all over the chicken. Make sure to coat both sides for full flavor.

Let the Chicken Rest

  • Allow the chicken to rest for 10 minutes. This helps the seasoning soak into the meat.

Preheat the Oven

  • Preheat your oven to 425°F (220°C). High heat helps create crispy skin and juicy meat.

Place Chicken on Baking Sheet

  • Put the flattened chicken on a baking sheet. Place it skin side up for best roasting results.

Roast the Chicken

  • Roast the chicken for about 40–45 minutes. The skin should become golden and crispy.

Check the Temperature

  • Insert a meat thermometer into the thickest part of the chicken. It should read 165°F for safe eating.

Rest Before Serving

  • Remove the chicken from the oven. Let it rest for 10 minutes before cutting.

Garnish and Serve

  • Sprinkle fresh parsley over the chicken. Serve with lemon slices for extra flavor.
