Ingredients
  

  • 1 bottle JUST Egg 12 oz
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup bell peppers diced
  • 1/2 cup mushrooms sliced
  • 1/2 cup spinach
  • 1/4 cup plant-based milk
  • 1/4 teaspoon turmeric for color
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions
  

Preheat Oven

  • Preheat oven to 375°F (190°C). Lightly grease an oven-safe skillet or baking dish.

Cook Vegetables

  • Heat olive oil in skillet. Add onion, peppers, and mushrooms. Cook until soft and slightly browned.

Add Spinach

  • Add spinach and cook until wilted. Remove from heat and spread evenly in skillet.

Prepare Egg Mixture

  • In a bowl, mix JUST Egg, plant milk, turmeric, garlic powder, salt and pepper. Stir well.

Combine Mixture

  • Pour egg mixture over cooked vegetables. Make sure everything is evenly covered.

Bake Frittata

  • Place skillet in oven. Bake for 20–25 minutes until center is set and top is firm.

Cool Slightly

  • Remove from oven and let rest for 5 minutes before slicing.

Slice and Serve

  • Cut into wedges and serve warm for best taste and texture.
