Ingredients
  

  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • ½ cup lemon curd homemade or store-bought

Instructions
  

Mix Dry Ingredients

  • In medium bowl, combine flour, baking powder and salt. Set aside.

Cream Butter and Sugar

  • In large bowl, beat butter and sugar until light, fluffy and creamy.

Add Egg and Vanilla

  • Add egg and vanilla extract. Beat until smooth and well combined.

Combine Wet and Dry Ingredients

  • Gradually mix in flour mixture. Stir until soft dough forms.

Chill the Dough

  • Cover dough with plastic wrap. Chill for at least 30 minutes to firm up.

Preheat Oven

  • Preheat oven to 350°F (175°C). Line baking tray with parchment paper.

Shape the Cookies

  • Take small dough portions and roll into balls. Place on tray, spaced apart.

Make Indentations

  • Press center of each ball with thumb or spoon to create a small well.

Fill with Lemon Curd
