Ingredients

  • 1 can chickpeas rinsed and drained

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons fresh parsley chopped

  • 1/2 cup cherry tomatoes sliced

Instructions
  

Rinse the quinoa

  • Place quinoa in a strainer. Rinse under cold water. This removes bitterness and improves taste.

Boil the water

  • Add water to a pot. Bring it to a boil on medium heat.

Cook the quinoa

  • Add quinoa to boiling water. Cover the pot. Cook for fifteen minutes until soft.

Fluff the quinoa

  • Turn off heat. Let quinoa rest. Fluff gently using a fork.

Prepare chickpeas

  • Rinse chickpeas well. Drain completely. Place in a large mixing bowl.

Add garlic

  • Add minced garlic to the bowl. Mix gently with chickpeas.
