Ingredients

  • 1 store-bought or homemade 9-inch pie crust
  • 6 large eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1 cup grated Gruyère or cheddar cheese
  • 1 small onion chopped
  • 1 bell pepper chopped
  • 1 cup fresh spinach
  • 4 slices bacon cooked and crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Prepare the pie crust by placing it in the 9-inch pie dish.

Cook Vegetables

  • Heat olive oil in a skillet. Sauté chopped onion and bell pepper for 3–4 minutes until soft.

Cook the Spinach

  • Add fresh spinach to skillet. Cook for 1–2 minutes until wilted. Remove vegetables and let cool slightly.

Prepare the Bacon

  • Cook bacon slices until crispy. Drain on paper towels. Crumble into small pieces for the quiche filling.

Whisk Eggs and Dairy

  • In a mixing bowl, whisk eggs, milk, and heavy cream together. Add salt and pepper. Mix until smooth and creamy.

Add Cheese

  • Stir in grated cheese into the egg mixture. Reserve a little for topping the quiche later.

Combine Ingredients

  • Add cooked vegetables and crumbled bacon to the egg and cheese mixture. Stir gently to combine.

Pour Into Pie Crust

  • Carefully pour the mixture into the prepared pie crust. Spread evenly with a spatula.

Top with Cheese

  • Sprinkle the reserved cheese on top of the quiche for a golden crust during baking.

Bake the Quiche

  • Place quiche in the preheated oven. Bake for 30–35 minutes until eggs are set and top is lightly browned.

Cool Slightly

  • Remove quiche from oven. Let it cool for 5–10 minutes before slicing. This keeps it from falling apart.

Serve and Enjoy

  • Slice the quiche into wedges. Serve warm or at room temperature. Perfect for brunch or a special breakfast.

Notes

  • Vegetable Variations: Add mushrooms, zucchini or tomatoes for a different flavor.
  • Cheese Options: Use Swiss, feta or mozzarella instead of Gruyère or cheddar.
  • Meat-Free Option: Omit bacon for a vegetarian-friendly quiche.
  • Make Ahead: Prepare quiche the night before and reheat in the oven gently.
  • Pie Crust Tips: Blind bake the crust for 5–7 minutes to avoid soggy bottom.
  • Season Generously: Eggs absorb salt well, so season filling carefully for flavor.
