Ingredients

  • 4 chicken breasts or thighs bone-in or boneless
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Juice of 1 lemon
  • 1/2 cup chicken broth optional, for juicier chicken
  • Fresh parsley for garnish

Instructions

Prepare the Chicken

  • Rinse and pat dry the chicken. Place it in a large bowl ready for the marinade.

Make the Marinade

  • Combine olive oil, minced garlic, lemon juice, salt, pepper, paprika, oregano and thyme in a small bowl.

Coat the Chicken

  • Pour marinade over chicken. Rub all sides to cover evenly. Let it rest 15–20 minutes for flavors.

Preheat the Oven

  • Preheat oven to 375°F (190°C). Use a baking dish or roasting pan lined with foil for easy cleanup.

Arrange Chicken in Pan

  • Place chicken in the pan, skin side up if using skin-on. Pour remaining marinade over chicken.

Optional Broth

  • Add 1/2 cup chicken broth to the pan for extra juiciness. This keeps chicken moist during baking.

Bake the Chicken

  • Bake for 25–35 minutes. Check for doneness with a thermometer: 165°F (74°C) in thickest part.

Broil for Color

  • Optional: Broil 2–3 minutes at the end for golden, crispy skin. Watch carefully to prevent burning.

Rest the Chicken

  • Remove chicken from oven. Let rest 5–10 minutes to retain juices before slicing.

Garnish and Serve

  • Sprinkle fresh parsley. Serve with roasted vegetables, rice or mashed potatoes for a complete meal.

Notes

  • Marinate chicken overnight for deeper flavor.
  • Use boneless chicken for faster cooking.
  • Add smoked paprika or chili powder for a spicier version.
  • Bake with vegetables in the same pan for one-pan convenience.
  • Use fresh herbs like rosemary or thyme instead of dried.
  • Sear chicken in a pan before baking for extra crispiness.
  • Lemon slices on top add bright flavor and presentation.
