Ingredients
  

  • 5 medium potatoes peeled and sliced
  • 1 onion sliced
  • 2 tomatoes chopped
  • 3 garlic cloves minced
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup vegetable broth
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Instructions
  

Prepare vegetables

  • Peel and slice the potatoes. Chop tomatoes and onions.

Heat oil

  • Heat olive oil in a tagine pot or skillet.

Cook onions

  • Add onions and garlic. Cook until soft and fragrant.

Add spices

  • Stir in paprika, cumin, turmeric, salt and pepper.

Add tomatoes

  • Cook tomatoes until they soften and release juices.

Add potatoes

  • Layer potatoes into the pot and pour in vegetable broth.

Simmer slowly

  • Cover and cook for 25–30 minutes until potatoes are tender.

Finish and serve

  • Add parsley and lemon juice before serving warm.
