Ingredients
  

For the cake:

  • 1 cup cake flour
  • 1 ½ cups sugar divided
  • 12 egg whites room temperature
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • ¼ teaspoon salt

For the orange cream:

  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon orange zest
  • 1 tablespoon orange juice

Instructions
  

Preheat oven

  • Set oven to 180°C.

Sift dry ingredients

  • Sift flour with half of the sugar and set aside.

Whip egg whites

  • Beat egg whites with cream of tartar until soft peaks form.

Add sugar

  • Slowly add remaining sugar and beat until stiff peaks form.

Add flavor

  • Mix in vanilla and orange zest.

Fold flour

  • Gently fold in flour mixture without deflating batter.

Transfer to pan

  • Pour batter into ungreased cake pan and smooth top.

Bake

  • Bake for 30–35 minutes until golden.

Cool upside down

  • Invert pan and cool completely.

Make cream

  • Whip cream with powdered sugar, orange zest and juice.

Serve

  • Slice cake and top with orange cream.
