  • ½ teaspoon salt
  • ½ cup butter softened
  • 1 cup sugar
  • 2 large eggs
  • 4 ripe bananas mashed
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans

Instructions

Preheat Oven

  • Preheat oven to 175°C (350°F). Grease a 9x5-inch loaf pan with butter or non-stick spray.

Mix Dry Ingredients

  • In a bowl, whisk flour, baking soda and salt. Set aside for later mixing.

Cream Butter and Sugar

  • In a large bowl, cream softened butter and sugar until light and fluffy using a whisk or spoon.

Add Eggs

  • Beat in eggs one at a time. Mix well until combined and smooth.

Add Bananas

  • Stir mashed bananas into the mixture. Ensure they are evenly blended for uniform flavor.

Add Sour Cream and Vanilla

  • Mix in sour cream and vanilla extract. The mixture should be smooth and creamy.

Combine Dry Ingredients

  • Gradually add flour mixture into wet mixture. Stir gently until just combined. Do not overmix.

Add Nuts

  • Fold in chopped walnuts or pecans evenly throughout the batter for added crunch.

Pour into Pan

  • Transfer batter into prepared loaf pan. Smooth the top with a spatula for even baking.

Bake the Bread

Notes

  • Use very ripe bananas for natural sweetness and moisture
  • Swap walnuts with pecans or almonds
  • Add chocolate chips for extra indulgence
  • Brush top with melted butter for a shiny crust
  • Add a teaspoon of cinnamon for warm flavor
  • Store wrapped in foil to maintain moisture
  • Toast nuts lightly for extra aroma
