Ingredients
  

  • 1 pound chicken breast or thighs
  • 1/2 pound pork shoulder or smoked ham
  • 2 cups chicken broth
  • 1 can 14 oz diced tomatoes
  • 1 cup corn kernels fresh or frozen
  • 1 cup lima beans or butter beans
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 1/2 cup barbecue sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon hot sauce optional

Instructions
  

Prep Meat

  • Cut chicken and pork into bite-sized pieces. Set aside.

Sauté Vegetables

  • In a large pot, sauté onion, bell pepper and garlic until soft.

Add Meat

  • Add chicken and pork to the pot. Stir and cook for a few minutes.

Add Broth and Tomatoes

  • Pour in chicken broth and diced tomatoes. Stir to combine.

Season Stew

  • Add salt, black pepper, paprika and hot sauce if using. Mix well.

Simmer

  • Cover and simmer on low heat for 1.5–2 hours, stirring occasionally.

Add Vegetables

  • Add corn and lima beans. Cook another 10–15 minutes until tender.

Add Barbecue Sauce

  • Stir in barbecue sauce for sweetness and flavor. Simmer for 5 more minutes.

Taste and Adjust

  • Taste and adjust seasoning as needed before serving.

Serve

  • Serve hot with cornbread, rice or fresh bread.
