Ingredients
  

  • Prepare Greens
  • Wash collard greens thoroughly. Remove tough stems and chop into bite-sized pieces.
  • Cook Smoked Meat
  • In a large pot cook ham hock or bacon over medium heat until fragrant.
  • Add Onion and Garlic
  • Add chopped onion and garlic. Sauté for 2–3 minutes until soft.
  • Add Broth and Seasoning
  • Pour in chicken broth add salt, pepper, and red pepper flakes if using.
  • Add Collard Greens
  • Add chopped greens to the pot. Stir to combine with the liquid and meat.
  • Simmer
  • Bring to a simmer over medium heat then reduce to low.
  • Cover and Cook
  • Cover and cook for 40–45 minutes until greens are tender.
  • Stir Occasionally
  • Stir occasionally to ensure even cooking and prevent sticking.
  • Add Vinegar
  • Stir in apple cider vinegar at the end to enhance flavor.
  • Serve
  • Serve hot as a side with cornbread fried chicken, or barbecue.
