Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter melted
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 cup chopped pecans
  • Optional: ½ tsp cinnamon for extra flavor

Instructions
  

Preheat the oven

  • Set your oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

Mix dry ingredients

  • In a bowl, combine flour, baking powder, baking soda, salt and cinnamon if using.

Combine wet ingredients

  • In another bowl, whisk melted butter, brown sugar, eggs, milk and vanilla until smooth.

Combine wet and dry

  • Pour wet mixture into dry ingredients. Stir gently until just combined. Do not overmix.

Fold in pecans

  • Add chopped pecans. Fold them carefully to distribute evenly throughout the batter.

Scoop batter into tin

  • Use a spoon or ice cream scoop to fill muffin cups ¾ full.

Bake the muffins

  • Place in the oven and bake for 18–20 minutes, or until a toothpick comes out clean.

Cool before serving

  • Remove muffins from the oven and let them cool on a wire rack for 10 minutes.
