Ingredients
  

  • 2 pounds fresh jalapeño peppers
  • 8 cloves garlic peeled
  • 4 cups sugar
  • 2 cups apple cider vinegar
  • 1 teaspoon turmeric
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon red pepper flakes optional for extra heat

Instructions
  

Prepare the Jalapeños

  • Wash the jalapeños thoroughly. Slice them into thin rounds. Remove seeds if you prefer less heat.

Blanch the Peppers

  • Bring a large pot of water to boil. Add jalapeños and cook for 2 minutes. Drain immediately.

Ice Bath the Peppers

  • Transfer the jalapeños into a bowl of ice water. Let them cool for 2–3 minutes. Drain and set aside.

Make the Syrup

  • In a saucepan, combine sugar, vinegar, turmeric, mustard seeds and celery seeds. Bring to a boil over medium heat.

Simmer the Candy

  • Add the jalapeños and garlic to the syrup. Reduce heat and simmer for 20 minutes. Stir occasionally.

Fill the Jars

  • Carefully spoon the hot candy into sterilized mason jars. Fill jars leaving 1/4 inch headspace.

Seal the Jars

  • Wipe rims clean. Place lids and screw bands on. Let cool at room temperature.

Store Properly

  • Store the jars in a cool, dark place for up to 6 months. Refrigerate after opening.

  • Use fresh, firm jalapeños for best texture and flavor.
  • Remove seeds for milder candy.
  • Add extra red pepper flakes for spicier candy.
