Ingredients
  

  • 4 –6 chicken pieces thighs, drumsticks, or breasts
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • Oil for frying vegetable or canola

Instructions
  

Prepare the Chicken

  • Clean chicken pieces and pat dry. Place in a bowl and season with salt and pepper lightly.

Marinate in Buttermilk

  • Pour buttermilk over chicken. Cover and refrigerate at least 2 hours for tender, juicy meat.

Mix Dry Coating

  • In a separate bowl, combine flour, cornstarch, garlic powder, paprika, black pepper and cayenne.

Coat the Chicken

  • Remove chicken from buttermilk. Dredge each piece in the flour mixture until fully coated.

Heat the Oil

  • Pour oil into a frying pan until 1–2 inches deep. Heat to 350°F (175°C).

Fry the Chicken

  • Carefully add chicken pieces to hot oil. Fry in batches to avoid crowding.

Cook Until Golden

  • Fry chicken for 12–15 minutes, turning occasionally. Ensure the crust is golden brown.

Check Internal Temperature

  • Use a thermometer; chicken should reach 165°F (74°C) inside for safety.

Drain Excess Oil

  • Remove chicken with tongs and place on paper towels to drain excess oil.

Serve Warm

  • Let cool 5 minutes. Serve hot with sides like mashed potatoes, coleslaw or biscuits.
