Ingredients
  

  • 4 cups vegetable or chicken broth
  • 3 tablespoons miso paste white or yellow
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • 2 servings fresh ramen noodles or dried
  • 1/2 cup corn kernels
  • 4 –5 shiitake mushrooms sliced
  • 2 green onions sliced
  • 2 soft-boiled eggs halved
  • Optional: nori sheets or sesame seeds for garnish

Instructions
  

Prepare the Broth

  • In a medium pot, add broth, soy sauce, sesame oil, ginger and garlic. Bring to a gentle simmer.

Dissolve Miso Paste

  • In a small bowl, mix miso paste with a few tablespoons of warm broth. Stir until smooth, then add back to pot.

Cook the Noodles

  • In another pot, cook ramen noodles according to package instructions. Drain and set aside.

Add Vegetables

  • Add sliced mushrooms and corn to the simmering broth. Cook for 3–5 minutes until tender.

Prepare Soft-Boiled Eggs

  • Boil eggs for 6–7 minutes. Cool in ice water, peel, and cut in half.

Taste the Broth

  • Check seasoning. Add more soy sauce or miso if needed for stronger flavor.

Assemble Bowls

  • Divide cooked noodles into bowls. Pour hot broth and vegetables over the noodles.

Add Toppings

  • Place soft-boiled eggs on top. Sprinkle with green onions, sesame seeds or nori sheets if desired.

Serve Immediately

  • Serve ramen hot to enjoy the rich broth and tender noodles at their best.

Optional Garnish

  • Add chili oil or a few drops of sesame oil for extra flavor if desired.

  • Use fresh ramen noodles for best texture.
  • Add bok choy, spinach, or shredded cabbage for extra greens.
