Ingredients
  

  • 1 whole chicken about 3–4 lbs, cut into pieces
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ cup small pasta or rice optional
  • Fresh parsley for garnish

Instructions
  

Prepare the chicken

  • Clean and cut the chicken into pieces. Pat dry and season lightly with salt and pepper.

Sauté the vegetables

  • Heat olive oil in a large pot. Add onion, carrots and celery. Cook until softened and fragrant.

Add garlic and herbs

  • Stir in minced garlic, rosemary and thyme. Cook for 1–2 minutes until fragrant, stirring constantly.

Brown the chicken

  • Add chicken pieces to the pot. Sear lightly on all sides for extra flavor. Do not cook fully.

Add broth

  • Pour in chicken broth until chicken and vegetables are fully covered. Bring to a boil over medium heat.

Simmer gently

  • Reduce heat and simmer for 35–40 minutes. Chicken should be tender, and flavors well combined.

Add pasta or rice

  • If using, add small pasta or rice. Cook for an additional 10 minutes until tender.

Adjust seasoning

  • Taste the soup. Add more salt or pepper as needed. Stir gently to combine.

Remove chicken bones

  • If desired, remove chicken from pot, debone and shred meat. Return meat to soup.

Garnish and serve

  • Ladle soup into bowls. Sprinkle fresh parsley on top. Serve hot with crusty bread or crackers.
