Ingredients
  

  • 1 pound ground beef or ground turkey
  • 1 cup cottage cheese
  • 1 cup cooked rice or cauliflower rice
  • 1 cup black beans drained
  • 1 cup corn kernels
  • 1 cup chopped lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1 avocado sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions
  

Cook the Ground Meat

  • Heat olive oil in a large skillet over medium heat. Add ground beef or turkey. Cook until browned while breaking it apart.

Add the Taco Seasoning

  • Add chili powder, cumin, paprika, garlic powder, salt and pepper. Stir well and cook two minutes for deeper flavor.

Prepare the Rice Base

  • Cook rice according to package instructions. If using cauliflower rice, sauté it in a pan for five minutes.

Prepare the Vegetables

  • Wash and chop lettuce, tomatoes, onion and cilantro. Slice the avocado just before serving to keep it fresh.

Warm the Beans and Corn

  • Add black beans and corn to the skillet with the meat. Stir gently and cook for two minutes.

Add Fresh Lime Flavor

  • Turn off heat and squeeze fresh lime juice into the meat mixture. This brightens the taco flavor.

Start Building the Bowls

  • Place rice or cauliflower rice at the bottom of each meal prep container. This creates the base.

Add the Taco Meat

  • Spoon the seasoned meat mixture evenly over the rice layer in each container.
