  • 2 large sweet potatoes peeled and cubed
  • 3 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 teaspoons fresh sage chopped
  • 100 g goat cheese crumbled
  • 1 teaspoon garlic powder optional
  • 1 teaspoon honey optional for sweetness
  • Fresh parsley for garnish

Instructions
  

Preheat the Oven

  • Set the oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Sweet Potatoes

  • Peel and cut sweet potatoes into 1-inch cubes. Place them in a large mixing bowl.

Season the Sweet Potatoes

  • Add olive oil, salt, pepper and garlic powder. Toss well to coat evenly on all cubes.

Add Fresh Sage

  • Mix chopped sage into the sweet potatoes. Ensure each piece has some sage for flavor.

Spread on Baking Sheet

  • Arrange sweet potatoes in a single layer on the baking sheet. Avoid overcrowding for even roasting.

Roast in Oven

  • Place in preheated oven. Roast for 25–30 minutes, stirring halfway, until sweet potatoes are golden and tender.

Crumble Goat Cheese

  • While potatoes roast, crumble goat cheese into small pieces. Set aside for topping.

Add Honey (Optional)

  • If using honey, drizzle it lightly over roasted sweet potatoes to enhance natural sweetness.

Top with Goat Cheese

  • Once roasted, remove sweet potatoes from oven. Sprinkle crumbled goat cheese evenly over them.

Garnish with Parsley

  • Add fresh parsley on top for color and a fresh taste. Serve immediately while warm.
