Ingredients
  

  • 4 ripe medium tomatoes
  • 1/2 cup diced white onion
  • 1 jalapeño seeded for less heat
  • 1/4 cup fresh cilantro leaves
  • 2 cloves garlic
  • 1 lime juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar optional, balances acidity

Instructions
  

Prepare the Tomatoes

  • Wash the tomatoes. Cut them into quarters for easier blending. Keep the skin on for extra texture.

Chop the Onion

  • Dice the onion finely. Smaller pieces blend smoothly without making the salsa too chunky.

Prepare the Jalapeño

  • Cut the jalapeño in half. Remove seeds for less heat. Chop roughly before blending.

Add Garlic and Cilantro

  • Peel the garlic. Add garlic cloves and cilantro leaves to the blender for fresh flavor.

Combine Ingredients in Blender

  • Add tomatoes, onion, jalapeño, garlic and cilantro to the blender. Blend until smooth but slightly chunky.

Add Lime Juice and Spices

  • Pour lime juice into the mixture. Add salt, pepper and sugar. Blend briefly to mix evenly.

Taste and Adjust

  • Taste the salsa. Add more salt, lime or jalapeño for stronger flavor. Blend again if needed.

Serve or Chill

  • Pour salsa into a bowl. Serve immediately or chill in the fridge for 30 minutes to enhance flavors.

  • Use Roma tomatoes for less watery salsa.
  • Roast tomatoes and garlic for a smoky flavor.
