Ingredients
  

  • 1 whole duck about 4–5 pounds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or melted butter
  • 4 cloves garlic minced
  • 1 tablespoon fresh thyme or rosemary
  • 1 orange sliced
  • 1 onion quartered
  • 1/2 cup chicken broth optional for basting

Instructions
  

Preheat Oven

  • Preheat oven to 350°F (175°C). Prepare a roasting pan with a rack.

Prepare Duck

  • Remove giblets and pat the duck dry with paper towels.

Score Skin

  • Lightly score the skin in a crisscross pattern to release fat.

Season Duck

  • Rub olive oil, garlic, salt, pepper and herbs all over the duck.

Stuff Duck

  • Place orange slices and onion inside the cavity.

Roast Duck

  • Place duck on the rack in the roasting pan. Roast for about 2 hours.

Baste Occasionally

  • Baste with pan juices or chicken broth every 30 minutes.

Check Doneness

  • Duck is ready when skin is golden brown and internal temperature is 165°F (74°C).

Rest Before Serving

  • Let duck rest 10–15 minutes before carving for juicy meat.
