For the chicken:
- 500 g chicken breast or thighs cut into cubes
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons coconut milk
- 1 tablespoon brown sugar
- 2 garlic cloves minced
- 1 teaspoon ginger grated
- 1 teaspoon turmeric powder optional
- Juice of 1 lime
For the peanut sauce:
- ½ cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- ½ cup coconut milk
- 1 teaspoon chili paste optional
Prepare the marinade
In a bowl, mix soy sauce, fish sauce, coconut milk, garlic, ginger, sugar and lime juice.
Prepare peanut sauce
Mix peanut butter, soy sauce, honey, lime juice, coconut milk and chili paste until smooth.
